Steps:
- Combine flour, baking powder, soda, salt and nutmeg. Place sugar, vanilla, eggs in a different bowl. Beat two minutes until thick. Add to flour mixture. Stir in coconut (toast first). Turn dough onto a floured surface, knead seven to eight times. Shape dough in 15" x 3" roll. Place on parchment paper lined cookie sheet. Pat roll to 1" thickness. Bake at 300 degrees for fourty minutes or until golden brown. Cool five minutes on wire rack. Cut diaganally into 1" slices. Bake 20 minutes or until thoroughly toasted. Remove from cookie sheet and cool.
