A simple french vinaigrette, with clean flavours. If tarragon isn't your favourite herb, you may choose to try another herb instead. When salad dressings from scratch are this simple, why buy processed, store bought?

This vinaigrette is a bit too vinegary for my taste. I prefer a more balanced flavor.

I love that this vinaigrette is made with olive oil. It's so much healthier than other vinaigrettes that are made with vegetable oil.

This vinaigrette is a great way to use up leftover herbs. I always have a bunch of parsley and chives in my fridge, and this is a great way to use them up.
