- 1) Peel sweet potatoes; cut into 1/2-inch-thick slices. Place potato slices in a 1-quart baking dish coated with cooking spray. 2) Combine cornstarch and brown sugar. Add orange juice and lemon juice, stirring well; pour over potato slices. 3) Cover and bake at 425 degrees for 45 to 50 minutes or just until potato slices are tender.
