Yield makes 3 dozen small cookies

Number Of Ingredients 7

4 tablespoons butter
1 cup brown sugar
4 tablespoons all-purpose flour
1 tablespoon ground cinnamon
2 cups all-purpose baking mix* (bisquick was used)
2/3 cups whipping cream or buttermilk
½ cup rolled oats

Steps:

  • Preheat oven to 375 degrees. Cream the brown sugar and butter in a mixer or with a hand beater until light and fluffy, about 3-4 minutes. Combine the dry ingredients in a seperate bowl(flour, baking mix, cinnamon). Alternate adding the dry ingredients and the whipping cream to the butter and sugar mixture, until just combined. Then Stir in the oatmeal. Use a small cookie scoop to get uniform sized cookies and place on an ungreased cookie sheet about 2 inches apart. Bake for 12-15 minutes or until the cookies are set and golden around the edges. Cool and enjoy!
