Cinnamon Souffle image

This is such a simple recipe and so delicious. I have been going through a lot of my cookbooks looking for recipes with cinnamon. I have diabetes and cinnamon helps lower your blood sugars. This recipe is a keeper for anyone though. It's especially good served warm with vanilla icecream..

I'm not sure what I did wrong, but my souffle turned out flat. I'm going to try again soon, though, because I'm determined to get it right.

I'm not a huge fan of cinnamon, but I really enjoyed this souffle. It was light and fluffy, and the cinnamon flavor was subtle but still noticeable.

This souffle was a bit too dense for my taste, but it still had a good flavor.
