Cinnamon Ginger Spice Cookies - Low Sugar/Diabetic Friendly Recipe image

Another recipe from the Splenda website. I found that the cookies with Splenda tend to be kinda dry and crumbly. These have a great flavor though. Just keep a close eye on them and don't overcook! NUTRITION FACTS Servings Per Recipe: 30 Amount Per Serving Total Carbs: 8g

6 Tbsp butter
1 c splenda (granulated)
1 egg
1/4 c molasses

3/4 tsp ground ginger
1 tsp cinnamon
1/2 tsp ground cloves

Steps:

  • 1. Mix together shortening, butter, Splenda, egg and molasses in large mixing bowl.
  • 2. Sift dry ingredients together and add to shortening mixture. Mix thoroughly.
  • 3. Wrap dough in saran wrap and chill in fridge for about 2 hours.

I had some trouble getting the cookies to spread out evenly. I think I might have needed to chill the dough for longer.

These cookies are a little too sweet for my taste. I might try reducing the amount of sugar next time.

I'm not a big fan of ginger, but I really liked these cookies. The cinnamon flavor is strong enough to balance out the ginger.
