Cinnamon Frosted Zucchini Bars - Steph image

If you have fresh zucchini, this is an excellent way to use it. It serves several and is sure to be a crowd pleaser. Easy for a family reunion or any special occasion.

3/4 c butter, softened
1/2 c sugar
1/2 c brown sugar
2 eggs
1 tsp vanilla
1 3/4 c flour
2 tsp baking powder
1 tsp cinnamon
2 c zucchini, grated
2 c powdered sugar (this is the frosting)
1 tsp cinnamon
2 Tbsp butter, melted
1 tsp vanilla
2 Tbsp milk

Steps:

  • 1. Cream 3/4 cup butter, 1/2 cup sugar, and 1/2 cup brown sugar. Add eggs and 1 tsp. vanilla. Mix in flour, 1 tsp. cinnamon and baking powder. Blend in zucchini.
  • 2. Pour into greased jelly roll pan and bake at 350 degrees for 25 - 30 minutes. While baking, prepare the frosting.
  • 3. Frosting: Mix the 2 cups powdered sugar, cinnamon, melted butter, vanilla, and milk. Mix until creamy. Add additional milk, if necessary, to get desired consistency. Cool zucchini bars and frost. Cut into squares. ENJOY!!!
