Steps:
- With electric mixer, beat butter in a large bowl until light. Gradually beat in powdered sugar. Beat in extracts. Add flour and salt and stir until just combined.
- Gather dough into a ball, then divide in half. Flatten each half into a disk. Wrap in plastic and refrigerate for 1 hour.
- Preheat oven to 325 degrees. Line 3 large baking sheets with parchment paper.
- Roll out one dough disk on lightly floured surface to 1/8 inch thickness. Cut out cookies with cookie cutter and place on baking sheets.
- Spread 1 teaspoon jam on center. Roll out remaining dough and cut out with cookie cutter. Cut out 1 inch triangle out of each cookie and place on top of jam cookies using a spatula.
- Bake cookies until slightly browned on edges, about 25 minutes. Transfer to racks and let cool.
- Add half of almond icing in a plastic bag. Add remaining icing and food coloring to another bag to make green icing.
- Pipe white icing along edges. Pipe green icing in dots on trees.
