Christmas Fruitcake Bars image

I have baked this cookie every Christmas for at least 25 years. I've had the recipe for so long, I don't even remember where it came from! -Jeaune Hadl, Lexington, Kentucky

Number Of Ingredients 8

1/4 cup butter, softened
1 cup sugar
2 large eggs
1-1/4 cups biscuit/baking mix
1-1/4 cups chopped mixed candied fruit
1 cup chopped pecans
1/2 cup flaked coconut
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Beat butter, sugar and eggs until fluffy. Add biscuit mix. Stir in candied fruit, pecans and coconut., Spoon into a greased 13x9-in. baking pan. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Remove to a wire rack to cool. Dust with confectioners' sugar.
