The absolute easiest cookie you'll bake! All the baking is done in a casserole dish!

Steps:
- 1. Preheat oven to 350 degrees. Spray a 2-quart deep baking dish with non-stick spray and set aside. In a large bowl beat eggs until lemon-colored. Gradually beat in sugar and extracts. Stir in date, coconut and chopped nuts. Pour into greased casserole dish and bake 30-35 minutes. Remove from oven and stir with wooden spoon (mixture will be moist and sticky). Cool dish on wire rack until cool enough to handle. Roll into 1" balls and roll in additional granulated sugar. Yield: 4 dozen
