Chopped Caprese Salad With Cucumbers image

We love Caprese salad in the summer when tomatoes are at their juiciest and basil is bursting. This salad adds cucumber for a fresh twist and a little crunch. The tiny bit of olive oil and balsamic add a touch of tang. Perfect for a hot summer day. Enjoy this Caprese salad for a snack, as a side dish, or even at a picnic.

Number Of Ingredients 7

5 oz grape tomatoes, chopped in half (about 1/2 of a dry pint container)
1/4 c fresh basil, chopped
8 oz "cherry size" mozzarella, chopped in fourths
1 medium cucumber, peeled, seeded, and diced
1 Tbsp olive oil, extra virgin
2 Tbsp balsamic vinegar
salt and pepper, to taste

Steps:

  • 1. Prep ingredients.
  • 2. Toss ingredients in a large bowl.
  • 3. Keep refrigerated until ready to serve. Serve with crackers or toasted, crusty French bread.
