Chocolate Raspberry Bars image

Another holiday favorite - frequently requested. I've substituted different flavors of jam, but raspberry seems to be the favorite.

Number Of Ingredients 12

CRUST
1 c all purpose flour
1/4 c confectioners' sugar
1/2 c butter, room temp
FILLING
1/2 c seedless raspberry jam
4 oz cream cheese
2 Tbsp milk
1 c vanilla or white chocolate chips
GLAZE
3/4 c milk chocolate chips
2 Tbsp vegetable shortening

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. In a bowl, combine flour and confectioner's sugar; cut in butter until crumbly. Press into a 9" square pan. Bake for 15-18 minutes or until browned.
  • 3. While crust is baking, melt white chocolate chips (I prefer the stove-top method, but you can melt them in the microwave, too.)
  • 4. Spread jam over warm crust.
  • 5. In a mixing bowl, beat cream cheese and milk until smooth. Add the melted vanilla chips and blend until smooth. Spread this mixture carefully over the jam layer. Cool completely. Chill until set, about 1 hour.
  • 6. Glaze: Melt the milk chocolate chips and shortening together, stirring frequently until smooth. Spread over the filling. Chill for 10 minutes, cut into bars, chill another hour. Store in refrigerator.

I'm not sure what I did wrong, but my bars didn't turn out as good as I hoped. They were still edible, but they weren't as rich and chocolatey as I expected.
