Chocolate Ganache Frosting image

Ganache-a smooth mixture of chocolate and cream-is one of the richest, most luscious of all chocolate frostings. This recipe is from "Martha Stewart's Cupcakes."

Yield Makes 4 cups

Number Of Ingredients 3

1 pound good-quality bittersweet chocolate, finely chopped
2 1/3 cups heavy cream
1/4 cup corn syrup

Steps:

  • Place chocolate in a large heatproof bowl. Bring cream and corn syrup just to a simmer over medium-high heat; pour mixture over chocolate. Let stand, without stirring, until chocolate begins to melt.
  • Beginning near the center and working outward, stir melted chocolate into cream until mixture is combined and smooth (do not overstir).
  • Refrigerate, stirring every 5 minutes, until frosting just barely begins to hold its shape and is slightly lighter in color. Use immediately (ganache will continue to thicken after you stop stirring).

I added a little bit of espresso powder to the frosting, and it gave it a wonderful coffee flavor. I also used chocolate chips instead of chopped chocolate, and it turned out great. The frosting was still smooth and creamy, but it had a little bit of

I substituted dark chocolate for semisweet chocolate, and it turned out great. The frosting was still rich and creamy, but it had a slightly more bitter flavor. I liked it even better than the original recipe.

I've made this frosting several times now, and it's always a crowd-pleaser. It's so easy to make and always turns out perfectly. I love that it's not too sweet, so it doesn't overpower the cake.

I was hesitant to try this frosting because I'm not a big fan of ganache, but I was pleasantly surprised. It's not too heavy or greasy, and it has a great chocolate flavor. I'll definitely be making this again.
