Chocolate Espresso Banana Muffins image

½ cup unsalted butter, melted
1 cup brown sugar
2 large eggs eggs
3 each ripe bananas
1 ½ cups all-purpose flour
1 cup oat flour
2 tablespoons unsweetened cocoa powder
2 tablespoons instant espresso powder
1 tablespoon ground cinnamon
1 teaspoon salt
½ teaspoon baking soda

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
  • Pour melted butter into the bowl of an electric mixer and add brown sugar, eggs, and bananas. Mix until combined. Mix in all-purpose flour, oat flour, cocoa, espresso, cinnamon, salt, and baking soda until combined.
  • Spoon batter evenly into the prepared muffin cups.
  • Bake in the preheated oven until tops spring back when lightly pressed, about 20 minutes.
