CHOCOLATE CHIP /TOFFEE COOKIES image

½ lb of butter (2 sticks)
1 cup light brown sugar
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
1 tspn baking powder
1 tspn baking soda
1/8 tspn salt
½ cup old fashioned oats
4 ounces Werther's toffee candy (take a 4ounce bag of Werther's candy and chop it in the food processor - you want toffee bits)
10 - 12 ounces Semi Sweet Chocolate Chips

Steps:

  • Preheat oven to 325 degrees Beat butter and sugars Add eggs & vanilla - mix Add flour, baking powder, baking soda, salt and old fashioned oats - once ingredients are combined and the dough is formed, add toffee bits and chocolate chips and mix. I use a teaspoon to make cookies on sheet pan and bake in the oven til light brown on edges - about 6 minutes. I usually make a double batch and freeze some - I love to snack on this dough both raw & cooked! ;P To freeze the dough - take parchment paper, put dough in the center and then make a log. I then put it in a ziplock bag and put the date on it - can be stored for 1 - 2 months. I cut slices of the dough for a quick chocolate/toffee cookie dough fix or to bake off a few cookies!
