CHOCOLATE CAPPUCCINO MOUSSE image

6.4oz/119g egg yolks
3.5oz/99g granulated sugar
2 liq oz/59ml water
10oz/284g bittersweet chocolate
4oz/113g cappuccino couverature
4oz/113 g unsalted butter
1oz/28g cappuccino compound
16 liq oz/473 ml heavy cream

Steps:

  • In mixer whip egg yolks unti thickened. Cook sugar and water to 238F add to eggs and beat on high speed to ribbon stage. Melt chocolate and butter. Combine melted chocolate with cappuccino compound. Fold yolk mixture into chocolate mixture. Whip cream and fold it into chocolate mixture.
