CHIPOTLE HONEY GLAZED MEATLOAF image

Meatloaf
3 tablespoons of avocado oil (or cooking fat of choice)
1 carrot, chopped about 1/4 inch thick
.5 red pepper, chopped
1 small onion, chopped
1 stalk celery
1 cup of oven roasted sweet potato
2 pounds ground beef
1 egg lightly beaten
.5 cup parmesan cheese, grated
.2 cup parsley, minced
.5 teaspoon garlic, minced
1 teaspoon dried thyme leaves
Salt and pepper
Glaze
.5 cup ketchup (TJs has an organic ketchup with no added sugar)
1.5 tablespoon chipotle puree
2 tablespoon Dijon mustard
3 tablespoons honey

Steps:

  • 1. Preheat the oven to 350. 2. Chop carrots add to large skillet with 3 tablespoons of oil and saute (they are going to take the longest to soften). 3. Chop red pepper and add to pan. 4. Chop celery and onion and add to pan. Season and saute for about 10 minutes until the vegetables are soft and have just hint of color. 5. Move the vegetables to a food processor until the vegetables are a fine mince, but not pureed. 6. In a large bowl, add Parmesan cheese, parsley, egg, garlic, sweet potato, thyme, pureed vegetables, ground beef, salt and pepper and 2/3 of the glaze. Mix well. 7. In batches, add to food processor and give it a couple of pulses to loose up the ground beef. 8. Press into a loaf pan and then turn the pan upside down on a baking sheet and remove the loaf pan. 9. Bake for 45 minutes. 10. After 45 minutes, coat with remaining glaze and increase the oven temperature to 425 and cook until internal temperature is 155 and glaze is golden brown and delicious (about 20 minutes). 11. Remove from oven and let it rest for 10 minutes.
