I had these last Christmas and had misplaced the recipe. These are a very good cookie and easy to transport, as they stay very firm.

Time 40m

Number Of Ingredients 9

3/4 c butter, no substitutions
1/4 c sugar
2 1/4 c brown sugar
3 eggs. beaten
1 1/2 c sifted flour
1/2 tsp salt
1 c chopped dates
powdered sugar
1/2 c chopped pecans

Steps:

  • 1. In mixing bowl, cream the butter, sugar, and brown sugar for one minute. Add the eggs one at a time, mixing well after each is added. Sift together the flour and salt and add to the bowl. Mix just until the dough comes together; add the pecans and dates, mixing until just combined. Butter 9 x 13 inch baking pan and dust with flour. Spread the batter in the pan evenly as if baking bar or brownies. Place on center rack of oven and bake for 25 minutes at 375 degrees. Remove from oven and let cool for 20 minutes. While still warm, using a tablespoon or small ice cream scoop, scoop the balls from the baking pan of baked dough and roll into a nice round shape. Roll each ball in powdered sugar to coat. Cool completely and store in an air tight container. Delish!
