CHILI- LIME GRILLED SHRIMP image

Yield Makes 4 servings.

Number Of Ingredients 10

Zest of one medium Lime
Juice of one medium Lime
1 tbsp Garlic, minced
1 tbsp Chili Powder
2 tbsp chopped fresh Cilantro
1 large Chipotle Pepper in Adobo Sauce, finely chopped
2-3 tbsp Olive Oil
Sea Salt & Fresh Cracked Pepper to taste.
2 lbs Large Shrimp, peeled and deveined
1 sm pkg 4" Bamboo Skewers soaked in water

Steps:

  • Combine first eight ingredients in a large bowl and stir to mix well. Add Shrimp and toss to coat. Cover and marinate Shrimp in refrigerator for 1-2 hours. Preheat grill to medium high heat. Prepare with seafood rack. Thread 2 Shrimp on each bamboo skewer. Grill Shrimp for 2-3 minutes per side. No more. Serve over steamed or Saffron Scented Rice.
