Chickpea and Cheese Salad image

This salad works great for snacks, lunches, and parties! It's filling and tasty!

1 (19 ounce) can garbanzo beans, drained
4 green onions, finely chopped
1 green bell pepper, diced
1 red bell pepper, diced
1 tablespoon dried chives
1 tablespoon dried dill weed
1 cup Havarti cheese cubes
1 tablespoon red wine vinegar
¼ cup olive oil
salt and pepper to taste
2 teaspoons chopped fresh parsley

Steps:

  • Mix the garbanzo beans, green onions, green bell pepper, red bell pepper, chives, dill, and Havarti cheese in a large bowl.
  • Whisk the red wine vinegar, olive oil, salt, and pepper together in a separate bowl; pour the mixture over the salad and toss to coat. Sprinkle parsley over the salad to garnish.
