Chicken Tortilla Casserole image

Number Of Ingredients 12

1 onion, chopped
3 Tbsp butter
1 can(s) chiles, chopped
2 c tomato juice
1 can(s) cheddar cheese soup
1 tsp chili powder
1/4 tsp garlic powder
2 c chicken breast, cooked and chopped
12 tortillas
1 c cheese, grated
1 pkg taco seasoning mix
1 bunch green onion

Steps:

  • 1. Saute onion in butter.
  • 2. Add chiles, tomato juice, cheddar cheese soup, chili powder and garlic powder.
  • 3. Fry chicken breasts with the taco seasoning mix and chop. Add chopped chicken to mixture.
  • 4. Break tortillas into about 6 pieces each.
  • 5. Put a layer of tortillas, layer of chicken mixture, and layer of grated cheese. Repeat until all is used.
  • 6. Bake at 350 degrees for about 30 minutes in 2 quart casserole, covered, and then uncover and add more grated cheese and cook until cheese is melted.
  • 7. Garnish with green onions.
