1 lb chicken breast, boneless, skinless, cubed
1/2 cup chicken broth
1/2 cup dry white wine
1 medium onion, chopped
2 garlic cloves, minced
1 bay leaf
1 teaspoon dried oregano
1 teaspoon dried thyme
1 cup broccoli floret
1 cup cubed yellow squash
salt and pepper

Steps:

  • Combine all ingredients except broccoli, squash, salt and pepper in a slow cooker.
  • Cover and cook on high 4-5 hours, adding broccoli and squash during the last 20 minutes.
  • Discard bay leaf. Season to taste with salt and pepper.
