Chicken Olivia image

Number Of Ingredients 10

2 c chicken, cooked and chopped
2 c rice, cooked
1 can(s) cream of chicken soup
3/4 c mayonnaise, light
1 can(s) water chestnuts, drained
1/2 c chopped onion
1 tsp lemon juice
1/2 c slivered almonds
2 c corn flake cereal, crushed
1 stick margarine

Steps:

  • 1. Preheat oven to 375.
  • 2. Mix chicken, rice, soup, mayonnaise, water chestnuts, onion and lemon juice in 9x13\" dish. (Optional: Add 3 chopped hard-boiled eggs.)
  • 3. Bake 30 minutes.
  • 4. Meanwhile, melt margarine in saucepan.
  • 5. Stir in cornflake crumbs and almonds.
  • 6. Spread topping on casserole.
  • 7. Bake another 15 minutes.
