Chicken Mushroom Melts image

This is supposed to be an appetizer, but I've managed to turn this dish into a main dish with soup or salads, french fries or even mashed potatoes.

1 1/4 lb chicken breasts, boneless and skinless, cut into 1/2 inch pieces
1 lb medium fresh mushrooms, quartered
1 Tbsp canola oil
1 1/2 tsp soy sauce
1/2 c heavy whipping cream
1/4 c butter, softened
3 clove garlic, minced
16 slice french bread (1 inch thick)
1 1/2 c cheddar cheese, shredded

Steps:

  • 1. In a large skillet over medium heat, cook chicken and mushrooms in oil for 5 minutes. Stir in soy sauce; cook 7 minutes longer. Stir in cream; simmer for 4-6 minutes or until sauce is thickened (do not boil).
  • 2. In a small bowl, combine the butter and garlic; spread over the bread. Place buttered side up on an ungreased baking sheet. Broil 4-6 in. from the heat for 2-3 minutes.
  • 3. Top each slice with 1/4 cup of chicken mixture. Sprinkle with cheese. Broil for 1-2 minutes or until the cheese is melted.
