Chicken Mulligatawny Soup image

This is a hearty, somewhat spicy soup. We like it a lot and I am writing it down after receiving a copy from my friend. Soup can be frozen before adding coconut milk, lemon juice and coriander.

This soup is a little spicy for my taste, but I still enjoyed it. I would recommend using less cayenne pepper if you don't like spicy food.

I love that this soup is so easy to make. I was able to throw it together in about 30 minutes. And the best part is that it tastes like it's been simmering all day long.
