Chicken Fiesta in Crock Pot image

My youngest grandson who I call Dink, is extremely picky, likes nothing spicy until he tried this. Dink absolutely loves this chicken and the rice I serve it with which something I throw together and call roasted garlic basmati. He now requests this each birthday.
