Chicken Fajita Kabob image

Inspired by the flavors of Mexico, these skewers with zesty marinated chicken, colorful bell peppers, and onions cook quickly on the grill for an easy family favorite.

¼ cup fresh lime juice
¼ cup orange juice
2 tablespoons vegetable oil
1 tablespoon paprika
1 tablespoon garlic powder
1 teaspoon Archer Farms™ ancho chile powder
¼ teaspoon Archer Farms™ ground cinnamon
⅛ teaspoon cayenne pepper
2 (14 ounce) packages Just Bare™ Chicken Breast Fillets, cut into 1-inch pieces
1 large white onion, cut into 1-inch pieces
1 red, orange or yellow bell pepper (or more as needed), cut into 1-inch pieces
12 (12-inch) skewers*
Lime wedges
Fresh cilantro

Steps:

  • Mix juices, oil and spices in large plastic food storage bag. Add chicken cubes; seal bag. Massage bag to coat chicken. Refrigerate 4 hours or overnight to marinate.
  • Heat grill. Thread chicken, onion and bell peppers onto skewers. Grill about 10 minutes until chicken is cooked through, turning as needed for even browning.
  • Serve with squeeze of fresh lime and garnish with cilantro.
