Chicken Bacon Ranch Casserole image

This is an amazing casserole! This is hearty, creamy and bursting with flavor from chunks of bacon throughout the dish. The bacon, ranch and cheese combo is perfect. 1 box penne pasta, 16oz
2 lb boneless skinless chicken breasts, cut into bite sized pieces
1 tsp Hidden Valley Ranch dressing mix powder
1 large onion, diced
1 c mayo, regular or light
1 c sour cream, regular or light
3/4 c milk
3 Tbsp Hidden Valley Ranch dressing mix powder
1 lb bacon, cooked crisp and crumbled
2 c shredded cheddar cheese
1 1/2 c French fried onions, French's

Steps:

  • 1. Cook your penne according to package directions to al dente. Preheat oven to 350 degrees.
  • 2. While your pasta water is coming to a boil, cook your cubed chicken seasoned with 1 tsp ranch dressing powder over medium heat until no longer pink.
  • 3. Cook your diced onion in a separate pan until soft and translucent.
  • 4. While pasta is cooking, mix together in a bowl the mayo, sour cream and 3 tbsp of ranch dressing mix.
  • 5. Stir in half of crumbled bacon and one cup of the shredded cheddar cheese.
  • 6. In large mixing bowl, mix pasta, chicken and onions.
  • 7. Add in mayo mixture. Combine thoroughly.
  • 8. Pour in milk and mix completely.
  • 9. Pour mixture into a 13 x9 casserole dish.
  • 10. Top with other half of bacon and one cup of cheddar.
  • 11. Cook at 350 degrees for 20 minutes.
  • 12. Remove from oven and top with the French fried onions.
  • 13. Return to oven for 10 minutes until hot, bubbly and French fried onions are golden. Enjoy!
