CHICKEN AND MUSHROOM GOULASH WITH GNOCCHI image

2 TBL olive oil in pan
1 TBl butter
1 1/2 lb ground chicken
1/2 lb white mushrooms, sliced
2 cloves garlic, chopped
1 medium onion, chopped
1 red bell pepper, seeded and chopped
2 tsp smoked paprika, 2/3 palm full
salt and pepper
1 c chicken stock
1 c tomato sauce
1/2 c sour cream or reduced fat sour cream
handful chopped flat leaf parsley
1 pkg fresh gnocchi, in refrigerated section, 12-14 oz
2 TBL chives

Steps:

  • Heat olive oil and butter in large deep skillet over medium to medium high. Add ground chicken. Brown meat 3-4 min, push off to sides of pan and add mushrooms, garlic, onions, peppers to center of pan. Cook 5 min then mix together with chicken and season with paprika, salt and pepper. Stir in stock and tomato sauce and bring to bubble. Reduce heat to simmer and cook 5 min then stir in sour cream and turn off heat. Adjust seasonings to your taste. While goulash cooks, bring medium pot of water to boil and salt and gnocchi until they puff like pillows and float. 5 min or to package instructions. Drain gnocchi and add to chicken just after you stir in teh sour cream. Ladle goulash with gnocchi into shallow bowls. Garnish with chives.
