I have been making these oatmeal bars since about 2007. All my family, friends, and co-workers that have eaten them love them. I typically use whatever dry fruits I have on hand. 3/4 c brown sugar, firmly packed
1/2 c granulated sugar
8 oz vanilla or plain, low fat yogurt
2 egg whites, slightly beaten
2 Tbsp applesauce, unsweetened
2 Tbsp skim milk
2 tsp vanilla extract
1 c whole wheat flour
1/2 c all purpose flour
1 tsp baking soda
1 tsp cinnamon, ground
1/2 tsp salt
3 c old fashioned oats, uncooked
1 c dried, diced/chopped apples, dates, figs, prunes, cranberries, and/or raisins
1/4 to 1/2 c almonds, slices
1/3 c coconut, shredded - optional

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In large bowl combine sugars, yogurt, egg whites, applesauce, milk and vanilla. Mix well.
  • 3. In separate bowl combine flours, baking soda, cinnamon, and salt; stir together well.
  • 4. Add dry ingredients to yogurt mixture and stir together well (by hand). Stir in oats, diced fruits, and almonds.
  • 5. Spread dough in an ungreased, 9" x 13" pan. Bake 28 - 32 minutes until golden brown. Cool bars completely before cutting into bars.
