This casserole is a great way to use up leftover chicken or turkey. It's also a great make-ahead meal. I often make it on the weekend and then reheat it during the week for lunch or dinner.

This casserole is a great way to get your kids to eat their vegetables. My kids loved the cornbread topping and didn't even notice the vegetables in the filling.

I made this casserole for a group of friends who are all on a gluten-free diet. I used gluten-free cornbread mix and it turned out perfectly. Everyone loved it!

I'm a vegetarian, so I substituted tofu for the chicken in this recipe. It turned out great! The tofu absorbed all the delicious flavors of the other ingredients.
