Chef John's Brie with Ripe Pear and Black Pepper image

This simple and delicious appetizer was inspired by a favorite sandwich I occasionally make--baguette, butter, brie, pear, and pepper. Here we're using thin crackers instead of bread, and the brie, pear, and black pepper make an impressive appetizer.

I'm not a big fan of brie, but this recipe changed my mind. It's the perfect balance of sweet and savory.

I added a drizzle of honey to the top of the brie before baking it. It gave it a nice caramelized crust.

I didn't have any ripe pears, so I used green pears instead. They worked just fine.

The brie was a bit too runny for my liking. I think I'll chill it for longer next time.

This recipe is a bit too rich for my taste. I think I'll try it again with a lighter cheese, like goat cheese.

I'm not usually a fan of brie, but this recipe changed my mind. The ripe pear and black pepper really balance out the richness of the cheese.
