Cheesy Zucchini Saute image

1/2 c onion, chopped
1/4 c butter or margarine
3 c zucchini, coarsely shredded
2 tsp fresh basil, minced (or 1/2t dried)
1/2 tsp salt
1/8 tsp garlic powder
4 oz cheddar cheese, shredded
1 c tomato, diced
2 Tbsp black olives, sliced

Steps:

  • 1. In a skillet, saute onion in butter until crisp tender.
  • 2. Stir in zucchini, basil, salt and garlic powder.
  • 3. Cook and stir for 4-5 minutes or until zucchini is crisp tender.
  • 4. Sprinkle with cheese, tomato and olives.
  • 5. Cover and cook for 4-5 minutes or until cheese is melted.
