Steps:
- 1. Bring cheese and butter to room temperature. Beat the cheese and butter together with a mixer until combined. Add the thyme and red pepper and beat again until combined.
- 2. Stir in the flour and pecans and mix by hand until combined. Form into a ball.
- 3. Shape into an 8 inch long log and wrap in cling wrap. Refrigerate and chill for approx. 4 hours or until the mixture is nice and firm.
- 4. Using a sharp knife, cut dough into 1/8 inch thick slices. Place on baking sheets coated with cooking spray or place slices on parchment paper.
- 5. Bake at 350 degrees F for approximately 10 minutes or until lightly browned.
