CHEESY HAM, GREEN BEAN AND POTATO BAKE image

Yield makes4-6 servings

Number Of Ingredients 7

1/2 pound ham cut into 1/2 inch cubes
1/2 ponnd russet potatoes, with their skin, cut into 1/2 inch cubes
1/2 pound fresh green beans cut into 1 inch pieces
3 tablespooons butter
3 tablespoons flour
1 small onion, finely minced
4 ounces plus 1/4 cup grated cheddar cheese

Steps:

  • Heat oven to 350 degrees. Prepare potatoes and place in a steamer basket over boiling water. Cover and steam while preparing green beans. Add green beans to potatoes and steam about 5 minutes more. Just long enough that potatoes can be pierced easily with a fork. While veggies are steaming, prepare cheese sauce. Melt butter in a medium sauce pan. Add onion and saute over medium heat for 3-5 minutes, until translucent. Add flour, and stir until flour is incorporated. Cook 1-2 minutes to get rid of raw flour taste. Add milk and stir constantly until mixture has thickened--about 5 minutes. Add grated cheese. Season with salt and pepper. Pour sauce over ham mixture and top with remaining cheese. Bake, uncovered until heated through, 10-15 minutes. Place under broiler for 3-4 minutes to brown cheese, if desired.
