Cheesy Creamed Corn Casserole image

Number Of Ingredients 10

1 small each, red and green bell pepper, chopped
1 sweet onion, chopped
1 stick butter, melt 6 tablespoons of it
3 eggs
1 c sour cream
1/3 c yellow corn meal
1/2 - 1 tsp kosher salt
1/2 -1 tsp fresh cracked black pepper
1 - 14 -15 oz can, creamed corn
1 c shredded cheddar cheese

Steps:

  • 1. Preheat oven to 350 degree F.
  • 2. In a skillet; saute the onion and peppers with 2 tablespoons of butter.
  • 3. In a bowl whisk the remaining 6 tablespoons of butter with the eggs and sour cream.
  • 4. Stir in pepper & salt, cornmeal, corn.
  • 5. Then stir in the onion mixture, along with the cheese.
  • 6. Pour into a 2 quart buttered casserole dish, and bake for 35 - 40 minutes, or until golden and set.
  • 7. Enjoy this dish as a side with just about any meat entree.
