CHARLESTON COCONUT PIE image

4 eggs, beaten
1/2 cup self-rising flour
1-1/3 cups sugar
1/4 cup (1/2 stick) butter, melted
2 cups milk
1 teaspoon vanilla extract
1 (8-ounce) can flaked coconut

Steps:

  • 1. Preheat oven to 350 degrees 2. Beat all ingredients together and pour into a 10 inch pie plate. Bake 45 minutes. Although the filling seems loose, do not bake the pie any longer. It will set and make its own crust as it cools in the refrigerator.
