2 tablespoons coconut oil
1 large yellow onion, chopped
2 tablespoons flaked coconut
2 tablespoons chopped garlic
3 cups stemmed and chopped Swiss chard
1 quart vegetable stock
1 (16 ounce) can coconut milk
ΒΌ cup finely grated Parmesan cheese, or more to taste

This soup was a delightful surprise! The combination of chard and coconut may sound unusual, but it worked perfectly. The soup was creamy and flavorful, with a hint of sweetness from the coconut milk. I added a bit of spice with some red pepper flake
