Champagne Chicken image

I did this one for a lot of weddings.

Number Of Ingredients 9

2 Tbsp all-purpose flour
1 tsp salt
1/4 tsp pepper
4 skined and boned chicken breasts
2 Tbsp butter, melted
1 Tbsp olive oil
1 c champagne or dry white wine
1/2 c sliced fresh mushrooms
1/2 c whipping cream

Steps:

  • 1. Combine flour, salt, and pepper in shallow dish. Dredge chicken in flour mixture.
  • 2. Heat butter and oil in skillet; add chicken, and sauté 3 to 4 minutes on each side.
  • 3. Add Champagne; cook over medium heat about 12 minutes or until chicken is done.
  • 4. Remove chicken, and set aside. Add mushrooms to skillet, and sauté 1 to 2 minutes.
  • 5. Add whipping cream to skillet; cook over medium heat, stirring constantly, just until thickened. Add chicken, and cook until thoroughly heated.
  • 6. Serve warm.

This recipe was easy to follow and the chicken turned out great! The sauce was a bit too thick for my taste, but it was still very good. I will definitely be making this again.
