CAULIFLOWER PIZZA BITES image

4 cups cauliflower florets
2 medium egg white
0.26 cups low fat cottage cheese
0.5 cups Parmesan cheese
2 teaspoon Italian seasoning
0.5 teaspoon garlic powder
0.5 cups mini turkey pepperoni
nonstick spray

Steps:

  • Directions: Preheat oven to 425F. Spray mini muffin tin with nonstick spray. Place cauliflower in food processor and pulse until it reaches a rice like consistency. Place cauliflower in microwave for 8 minutes in a microwave safe bowl. Do not add water or cover. Remove from microwave and add all other ingredients, stirring to combine. Return to microwave for 2 minutes. Mix again. Divide among prepared muffin tins. Fill each one and press down lightly to compact. Bake for 30-35 minutes, or until tops are brown. Freezing Directions: Allow cauliflower bites to cool completely. Remove from muffin tin, place in freezer bag, label and freeze. TO SERVE: Remove from freezer bag, reheat in microwave 30 seconds-1 minute. Serve with pizza sauce for dipping.
