Cast Iron Tilapia Recipe - (4.6/5) image

4 Tilapia fillets
1 cup seasoned bread crumbs
1 tbsp grated Parmesan cheese
1 tbsp of dried parsley
Old Bay seasoning
1/8 tsp curry powder
olive oil
butter
white wine, vinegar, or beer

Steps:

  • Wash the tilapia fillets. Soak the tilapia fillets in cold water with a splash of vinegar, wine or beer for 15 minutes. Pat dry and season with Old Bay. Coat the tilapia in olive oil. 2 Mix bread crumbs, Parmesan cheese, and parsley in a small shallow bowl. 3 Place cast iron skillet on medium-high heat. Add about 2 tbsps of olive oil, 1 tbsp of butter, and 1/8 tsp of curry powder. Heat until butter is melted and oil is hot. Make sure the mixture coats the bottom of the skillet. 4 Set oven to broil. Dip the oiled and seasoned tilapia in the bread crumb mixture. Place in heated skillet. Allow tilapia to cook for about 2 minutes or until golden brown. Use spatula or tongs to turn and allow to brown on the other side. 5 Place the skillet in the oven and broil for about 5 minutes. Watch the tilapia carefully as some ovens broil faster or slower than others.
