Cashew Pesto image

Sweet basil, best if homegrown and freshly harvested, combines with garlic, olive oil, cheese, and nuts to make a potent and flavorful sauce. Serve on pasta or bread.

4 ½ cups sweet Thai basil
1 ½ cups extra-virgin olive oil
1 ½ cups grated Parmesan cheese
1 cup cashews
8 cloves garlic, peeled
1 tablespoon dried oregano
1 sprig fresh parsley
salt and ground black pepper to taste

Steps:

  • Combine basil, oil, Parmesan cheese, cashews, garlic, oregano, parsley, salt, and pepper in a food processor. Mix until desired texture is reached.
