Cashew Pea Salad image

A crisp pea salad that has a tangy dressing. Looks really pretty when lined with lettuce leaves and garnished with tomato slices. Cook time is actually the chill time for the dressing.

This salad was a complete disaster. The dressing was too runny and the flavors didn't go together at all.

I found this salad to be a bit bland. I think it could have used more salt and pepper.

This salad is a bit too sweet for my taste, but I think it could be easily adjusted by reducing the amount of sugar in the dressing.
