2 cups raw carrots, shredded
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
1/2 cup seedless raisin
1/4 cup low-fat yogurt (plain)

Steps:

  • Scrub, scrape and shred carrots.
  • Combine with raisins.
  • Mix together remaining ingredients and pour over.
  • Mix thoroughly.
