Carrot Confetti Salad image

Need a quick salad for unexpected guests or to bring to a gathering? This is a delicious salad that everyone seems to like. And the best part? It's made with ingredients you already have on hand and is done in 10 minutes.

Number Of Ingredients 8

DRESSING
1/2 cup mayo
1 tb. sugar
FRUITS AND VEGGIES
1-10 oz. bag shredded carrots
1 large granny smith apple chopped and soaked in orange juice (or 1 cup of water mixed with 1 tb. lemon juice) for a few minutes, then drained, to prevent browning
1/2 cup raisins, soaked in warm water for a few minutes then drained
1/4 cup craisins

Steps:

  • 1. Mix mayo and sugar in a small bowl and set aside.
  • 2. In large bowl, combine carrots, drained apples, drained raisins and craisins.
  • 3. Add dressing and mix gently. Chill for 1-2 hours. Serve.
