CAROLYN'S COLLARD GREEN SOUP: image

Number Of Ingredients 8

3/4 cup of white navy beans (great northern)
1 tsp. salt
6 med. potatoes peeled and diced
1 pkg. frozen collard greens (or equivalent amount of fresh)
2 Chorizos (Spanish sausage)
1 Morcilla (blood sausage)-ham hocks will do
1 lb. lean spare ribs
1 lb. piece of ham

Steps:

  • Soak beans in salt water over night (cover). Cook in same water for 1 hr. and then add remaining ingredients. Cook slowly for 2 more hours. Take meat out, cut into small pieces, and then return to the soup. Let the soup cool, skim off the fat and then reheat before serving
