Carol's No-Crust Coconut Pie image

Because she knows how much I love coconut, my sister made this pie when I visited her one time. Let's just say I was a pretty happy camper!!! (My sister used 2 cans of coconut just for me... :D) EDITED: to change baking time based on reviewers comments. Thanks, y'all!

This pie is perfect for a summer gathering. It's light and refreshing, and the coconut flavor is a nice change from the usual fruit pies.

I'm not a huge fan of coconut, but I still enjoyed this pie. The filling is light and fluffy, and the crust is perfectly flaky.

This pie is a great way to use up leftover coconut milk. I always have a can or two in my pantry, so it's nice to have a recipe that I can use it in.

I had some trouble getting the filling to set properly, but I think that was because I didn't let it cool long enough before refrigerating it.

This pie is a bit too sweet for my taste, but I think that's just a matter of personal preference. Otherwise, it's a great recipe.
