Yield Makes 2 cups

Number Of Ingredients 6

2 tablespoons whole green cardamom pods, crushed
1 cup whole milk
1 cup whipping cream
1/2 cup sugar, divided
1/4 vanilla bean, split lengthwise
4 large egg yolks

Steps:

  • Place cardamom pods with seeds in heavy medium saucepan over medium-high heat. Stir until pods brown, about 5 minutes. Add milk, cream, and 1/4 cup sugar. Scrape seeds from vanilla bean into pan; add bean. Bring mixture to boil. Whisk egg yolks and remaining 1/4 cup sugar in medium bowl. Gradually whisk in hot milk mixture. Return mixture to same saucepan. Stir over medium-low heat until custard thickens and leaves path on back of spoon when finger is drawn across, stirring constantly, about 2 minutes (do not boil). Cover and chill until cold, about 3 hours. Strain into medium pitcher. (Can be made 2 days ahead. Cover and refrigerate.)

This crème anglaise was a disappointment. The cardamom flavor was too strong and it overpowered the other flavors. I won't be making this again.

This crème anglaise was a bit too runny for my taste, but the flavor was spot on. I think I'll try making it again with a little less milk next time.

I'm not a huge fan of cardamom, but I decided to give this recipe a try anyway. I'm glad I did! The cardamom flavor was not overpowering and it really complemented the sweetness of the crème anglaise. I'll definitely be making this again.

This recipe was a bit more involved than I expected, but it was worth the effort. The crème anglaise turned out beautifully and the cardamom flavor was subtle but noticeable. I served it with fresh berries and it was a hit with my family.

I've made crème anglaise many times before, but this cardamom version is by far my favorite. It's so easy to make and the flavor is out of this world. I'll definitely be making this again and again.
