Steps:
- Preheat oven to 450. Cook bacon until crisp, about 8 minutes. Remove bacon from pan and drain on paper towels. Meanwhile, generously season pork chops wit salt and ground caraway, coating both sides. Sear chops in bacon fat until browned on one side, 5 minutes. Place on baking sheet, seared side up and bake in oven until medium, 20 - 25 minutes. Toast caraway seeds in pan with remaining bacon fat over medium low heat, about 2 minutes. Add shallots and let sweat until softened, 4 minutes. Add cabbage and season with salt. Toss to coat with bacon fat and sweat until tender, about 30 minutes. Add apple cider vinegar and cider and cook until liquid is reduced by half, about 10 minutes. Add apples, stir, cover and cook until soft, about 2 minutes. Place 1 chop on each plate with cabbage and top with crumbled bacon.
