Steps:
- 1. Preheat oven to 350 degrees. Spray a 9"x 5" loaf pan with cooking spray.
- 2. In a large bowl, mash bananas. Add coffee creamer, oil, eggs, sugar and coffee granules. Mix well.
- 3. In a medium bowl, stir together the flour, baking soda, baking powder, cinnamon and salt. Add dry mixture to the banana mixture and mix well.
- 4. Pour batter into prepared pan and bake for 60 minutes, or until it tests done with a toothpick. I start checking after 50 minutes. Let cool in pan for about 10 minutes then remove.
- 5. Now while loaf is cooling, melt the butter in a saucepan, add the brown sugar and vanilla. Stir. Keep stirring... and bring to a boil. Keep stirring and reduce to simmer for 3 minutes. Let cool it will thicken as it cools. If it is already thick just pour over the loaf now. Once the glaze has set ENJOY!
